Egg Science

 

These are very rough notes describing some experiments we’re developing that use common household proteins to illustrate

 

1.      Polymers

2.      Gelation

3.      Solution-Solvent interactions

4.      Chemical Equilibria and Rates of Reaction.

 

Activities –

1.      Denature Egg White under different solution conditions.  Use a few milliliters of egg white in a test tube + 1 millilitre of test solution.

2.      You can use acid, base, alchohols, organics, salts + whatever you like.

3.      You can extend the activity to look at temperature dependence.  At 50C everything happens much faster.
