Pineapple Peanut Stew Ingredients - 1 cup chopped onions 2 garlic cloves, minced or pressed 1 tablespoon oil 1 bunch of kale or leafy green sliced into 1 inch strips 2 cups (20 oz.) canned crushed pineapple (include juice) 1/2 cup peanut butter 1 tbs Tabasco or hot sauce 1/2 cup fresh cilantro chopped green onions/shallots/scallions crushed peanuts, salt Method - Saute onions and garlic in saucepan until onions are light brown (10 min). Add pineapple and juice and bring to simmer. Stir in kale, cover and simmer for 5 minutes. When kale just tender add peanut butter, Tabasco, cilantro and cook another 5 minutes. Scallions and crushed peanuts can be added at end if desired.
