Spicy Eggplant Ingredients - 1 lb (450g) of Eggplant 2 tsp salt 3 tbsp vegetable oil 2 garlic cloves crushed 1 inch of fresh ginger chopped up. 1 onion halved and sliced 1 fresh red chilli sliced 2 tbsp hoisin sauce 1/2 tsp chilli sauce 1 tbsp dark brown sugar 1 tbsp wine vinegar 1 tsp ground Szechuan pepper 300 ml/1 cup of vegetable stock. Steps - 1. Cut eggplants into cubes and sprinkle with salt. Leave for 30 minutes and then clean off. 2. Heat the oil in a preheated wok. Stirfry garlic, ginger, onion and chilli briefly. Add Eggplant and fry for another minute or two. 3. Add soy sauce, hoisin sauce, chilli sauce, sugar, wine vinegar, and stock and let simmer uncovered for 10 minutes or until the eggplant cooks. 4.
