Broccoli Egg-Lemon Soup Ingredients 2 cups finely chopped onion 3 garlic cloves 2 tablespoons olive oil 2.5 cups chopped broccoli florets 1 capcicum diced 1 tablespoon minced dill 1/2 teaspoon salt 1/4 teaspoon ground black pepper 4 cups of water or stock 2 large eggs 1/4 to 1/3 cup of lemon juice 1 cup cooked rice fresh parsley Method 1. In soup pot brown onions and garlic until translucent. 2. Add broccoli, capcicum, dill, salt, black pepper and saute until broccoli turns bright green. 3. Reduce heat, cover and simmer until veges are tender. Turn off the heat. 4. Whisk eggs and lemon juice in a bowl. Add in the 4th cup of water/stock. 5. Gently add egg mixture to soup stirring as you go. 6. Stir in the rice. 7. Gently reheat the soup but don't let it boil.
