Pavlova Ingredients - 2 teaspoons corn starch 4 egg whites 3/4 cup powdered sugar 1 teaspoon vanilla essence 1 teaspoon vinegar 1.25 cups of thick cream 1/2 pound of fruit (eg. strawberries or kiwi) Method HEat oven to 250F Brush baking tray with butter or oil Dust with cornflour Mark a 20cm circle in the tray Beat eg whites for 1 minute or until soft peaks form Add suger gradually, beating all the time so the mixture becomes glossy and thick Add vanilla and vinegar and keep beating. Spread merangue onto the marked circle on tray. Bake 1.25 hrs - no peaking! Cool completely in oven with oven door just slightly ajar When cool, move pavlova to tray and decorate with whipped cream and fruit.
