Lamingtons Ingredients : 125g (4oz) butter 2 eggs lightly beaten 2/3 cup of milk 3/4 cup sugar 2 cups Self Raising flour 1/2 teaspoon vanilla pinch of salt Cake : (1) Prepare oven at 375 F or 190 C (2) Sift dry ingredients. (3) Cream butter and sugar very well. (4)Gradually add the eggs and vanilla, beating well after each addition. (5) Lightly fold in the flour alternately with the milk until well blended. (6) Cook in greased, deep tin, 23cm(8 1/4") X 29cm(11 1/2") X 3cm(1 1/4") (7) When cool cut cake into lamington sizes 4cm(1 1/2") X 5cm(2"). (8) Cool completetly in the refrigerator before dipping and coating the cakes. This cooling will prevent cake crumbling during the finishing process. Lamington Icing : 2 cups soft icing sugar 1 tablespoon cocoa 1/2 cup boiling water, or sufficient to make a moderately thin coating icing 30g(1 oz) butter (1) Melt butter, beat in cocoa. (2) Beat in the icing sugar and add the boiling water a little at a time until desired consistency is reached. (3) Flavour with vanilla or use 2 teaspoons of rum in place of 2 teaspoons of water.
