Corn rice with vegetables. 1) Rice, steamed with seasonings, vegetables, etc mixed in (requires several rounds in the rice cooker). Or you could do fried rice, which takes a bit longer. 2) Vegetable stir fry - mix of peppers, onions, celery, carrots, water chestnuts, mushrooms with usual stuff like ginger, garlic, oyster sauce, soy sauce, etc. 3) Single vegetable dishes: a) spinach stir fried with garlic - only hassle is peeling enough garlic. Fry garlic in oil until fragrant, then toss one bag of spinach in for 1 minute, cover, and you're done. Repeat with further bags of spinach as necessary. b) same as above, but with beansprouts, and maybe 5 minutes of frying. 4) Things with lots of liquid: a) curry - Anjali's the expert on this b) soup - clear vegetable soup with zuccini, artichokes, carrots, potatoes, mushrooms. Chop, chop, dice, dice, boil. 5) Ostrich egg omelette. My personal feed-a-thousand-on-a-shoestring meal revolves around a hearty tomato lentil stew served with sour cream on top. You can usually do one for well under a buck a head, leaving plenty of cash for a fabulous salad and loaves of hearty bread. Advantage: only one big pot, one big bowl, and a bread knife. Slightly more fun are make-your-own burritos: Big pot of black beans and rice (cheap and easy), lettuce, tomatoes, avocados, grated cheese, salsa, sour cream, tortillas. Spanish rice; essentially a spaghetti sauce with sauteed onions, green peppers, and any other spices you like mixed with steamed rice, can also use spciy italian sausage for a little extra kick. goes well with cornbread and a side of black or red beans, or maybe steamed cauliflower. 4. Penne with broccoli sauteed in a garlic butter sauce (can also add chunks of boneless chicken if budget allows) with a veggie side and bread. 5. Fajitas (chicken or just veggie with bell peppers, onions, and tomatoes) also goes well with cornbread and blackbeans or rice. 6. Stuffed squash with a side of mixed steamed vegetables and mashed potatoes (could substitute squash with marinated chicken breasts.) 7. Basic macaroni and cheese with the addition of steamed chopped broccoli, chopped tomatoes, and chili powder to taste (possibly a little cayenne, and can also add italian sausage or ground beef browned with chili powder) served with bread or biscuits (baking powder not sweet.)
