Fish (Trout or Salmon) with Pineapple Ingredients - 4 fillets of fish - skinned 2 tbsp vegetable oil 2 garlic cloves 4 slices of fresh pineapple diced. 1 celery stick sliced 1 tbsp light soy sauce 50ml/ 1/4 cup pineapple juice 150ml/ 2/3 cup fish stock 1 tsp cornflour in 2 tsp water Method - Cut fish into strips. Saute lightly for 2 minutes in oil. Put aside when cooked almost all the way through. Put garlic, pineapple and celery in pan. Stir-fry for 2 minutes. Add soy cauce, pineapple sauce and fish stock and cook until sauce has reduce. Add cornflour in water to juices to thicken the sauce. Return the fish to the wok and mix thoroughly.
