Caribbean Fish in a Packet Ingredients - 2 sheets aluminium foil 1'*2' 2 * 6 ounce fish fillets 1 small tomato 2 tablespoons olive oil 3 scallions/green onions/shallots 2 tablespoons chopped fresh cilantro juice of 1 lime 1/2 fresh chili or Tabasco source dash of salt and pepper Method - Fold over aluminium foil to make 1'*1' Put fish in middle Add tomato and everything else on top. Wrap up to be air-tight. Bake for 20 minutes or until fish flakes nicely. Unwrap and eat.
