Red Curry with Cashews Ingredients - 250ml/9 fl oz/ 1 cup coconut milk 1/4 tsp soy sauce 60g/ 2oz/ 4 baby corn cobs halved lengthways 125g/ 1/4 lb broccoli florets 125g/ 1/4 lb green beans cut into 2 inch pieces 25g / 1 oz cashew nuts fresh basil 1 tablespoon coriander (cilantro) 1 tablespoon roast peanuts (as garnish) Sauce - BUY Red Thai Curry Paste (3 tablespoons worth) or, 7 fresh red chillies - halved, seeded, blanched 2 tsp cumin seeds 2 tsp coriander seeds 1 inch galangal 1/2 stalk lemon grass chopped 1 tsp salt 4 garlic cloves 3 shallots 2 kaffir lime leaves 1 tbsp vegetable oil Method - 1. Put curry paste in wok and heat until you can smell it. 2. Put heat on medium. Add coconut milk, soy sauce, corn, broccoli, beans and cashews. 3. Bring to the boil and simmer for 10 minutes (till veges are cooked). 4. Add basil and coriander, garnish with peanuts and all done. Simple Vegetarian.
