Potato and Pea Curry Ingredients - 1lb potatoes 1lb peas 1 large onion finely chopped 2 tablespoons oil or butter 2 tablespoons fresh mint 1 teaspoon powdered ginger 1 teaspoon ground tumeric 1/2 teaspoon salt 1/2 teaspoon chilli powder 1/4 cup water 1 tsp garam masala 1 tablespoon lemon juice Method Peel and dice the potatoes into 1cm cubes. Heat the oil in a pot, stir-fry the onions until golden. Add mint and ginger, tumeric, salt and chili powder and stir. Add potatoes, pour in water and stir well. Bring to a boil and then cover and simmer for 20 minutes. Uncover, add garam masala, peas and lemon juice. Cook for 10 more minutes.
