Chicken Curry Ingredients - 1/3 cup butter 1.5 teaspoons curry powder 1 small onion chopped coarsely 1 clove garlic chopped 1/4 cup all purpose flour 2 teaspooons sugar 1/2 teaspoon dried ginger 1/4 teaspoon dry mustard 1/4 teaspoon pepper 1 medium tomato, chopped 1 medium tart apple, choppped 1/4 pound smoked ham, chopped 1/4 cup coconut 2 cups chicken broth 1.5 pounds of chicken 4 cups hot cooked rice Steps - Heat margarine in 3-quar saucepan over medium heat. Cook curry powder, onion and garlic in margarine for 2 minutes. Stir in flour, sugar, ginger, mustard, pepper, tomato, apple and ham. Cook 5 minutes. Stir in coconut and chicken broth Heat to boiling, reduce heat, cover and simmer 1 hour, stirring occasionally.
