Little Cheesecakes Ingredients - 1. 12 vanilla wafers or similar small biscuit that fits in the bottom of a cup-cake. 2. 12 aluminium cup-cake liners. 3. 16 oz (2 packets) of cream cheese 4. 1/2 cup of sugar. 5. two eggs Recipe - 1. Beat 16 oz of cream cheese in a bowl. 2. Add eggs and sugar and beat until well mixed 3. Place 12 liners into a pan and put a vanilla wafer in each (to act as a cake base) 4. Pour the cream cheese into the liners. 5. Bake for 30 minutes at 325F or until a light gold appears at top. Additions - 1. Place a cherry in the centre of each cup-cake 2. Mix in chocolate chips 3. Coat with cinnamon and nutmeg.
