Lemon Date Bars Ingredients - 2 cups chopped, pitted dates juice of 1 lemon 1/2 cup water 1/2 cup butter softened 3/4 cup brown sugar 1.75 cups white flour 1 tsp salt 1/2 tsp baking soda 1 cup rolled oats Method 1. Heat oven to 350F. 2. In a saucepan combine dates, lemon juice and water. Cook on low heat for 10 minutes, stirring occasionally. Let cool. 3. Cream butter and brown sugar in a bowl. Stir in flour, salt and baking soda. Add oats and mix well. Dough should be crumbly but hold when squeezed. 4. Grease a 8 or 9-inch pan well and put 2/3 of dough in bottom. 5. Spread the date mixture over the dough. Crumble and drop remaining 1/3 of dough on top. 6. Bake for 30 minutes. Cool and then cut into 16 bars.
